Baked Omelettes
For two
4 eggs
1/8 of a red pepper, chopped
1 tomato, chopped
8 small shrimp
1 green onion, chopped
a bit of pepperoni, precooked sausage, bacon, or ham; chopped
salt and freshly ground pepper
mozzarella, marble and Gouda cheese
dill
Italian Mrs. Dash
Whisk eggs. Add red pepper, tomato, shrimp, onion, desired meat, salt
and pepper. Pour into buttered pie pan. Lay bits or slices of cheese on top.
Bake at 400° F for 20 minutes. Sprinkle dill and Italian Mrs. Dash over
omelette. Let cool 5 minutes before serving. Serve with hash browns and/
toast.
