Banana Coconut Bread

2 eggs
1 cup organic sugar
½ cup sunflower oil
3 over-ripe bananas, mashed
1 tsp almond flavouring
1½ cups whole wheat flour
½ cup coconut flakes
1½ tsp baking powder
½ tsp baking soda
½ tsp sea salt
½ cup Maraschino cherries, cut up

In medium bowl, beat eggs. Add sugar and oil. Beat well. Add mashed
​bananas and almond flavouring. In a large bowl, mix flour, coconut,
​baking powder, baking soda, salt and cherries. Stir wet ingredients into
​flour mixture and stir well. Pour batter into oiled loaf pan and cook at
​350° F for an hour.
