Cakes, Cupcakes and Muffins
Banana Coconut Muffins​​




​​​​½ cup olive oil
3 very ripe bananas
1 cup organic sugar
2 eggs
1 tsp vanilla
1 ¼ cup whole wheat flour
1 tsp baking soda
½ tsp cinnamon
¼ tsp ground nutmeg
1 cup unsweetened and finely grated coconut

In a large bowl, mash bananas. Add oil, sugar, eggs and vanilla.
​ Beat on low for 2 minutes. In a medium sized bowl, combine flour,
​baking soda, cinnamon, nutmeg and coconut. Add to banana
​mixture and mix well. Pour into lined, 18 muffin tins or well greased ​
​12 mini-loaf pans. Bake at 350° F for 10-15 minutes.
