Cakes, Cupcakes and Muffins
Blueberry Muffins

1 ¾ cups flour
½ cup & 2 tbsp sugar
2 ½ tsp baking powder
¾ tsp salt
1 well-beaten egg
¾ cup milk
1/3 cup oil
¾ to 1 cup fresh or frozen blueberries, thawed and rinsed
sugar
melted butter

Combine first 4 ingredients; make well in center. Combine egg,
​milk and oil; add all at once to dry mixture. Stir just till moistened.
​Fold in blueberries. Fill well-greased muffin pan or paper bake
​cup-lined muffins pan 2/3 full. Bake at 400° F for 20 to 25 minutes.
​Brush tops of muffins with melted butter and dip into bowl of sugar.
​Make 12 muffins.
