Carrot Zucchini Muffins
1 cup whole wheat flour
1 cup unbleached flour1 cup organic sugar1 tsp baking powder½ tsp baking soda½ tsp salt1 avocado, mashed2 eggs1 zucchini, grated1 carrot, grated1 cup apple sauce1 tsp vanilla1 tsp cinnamon¼ tsp nutmegIn a large bowl, combine flour, sugar, baking soda, baking powder,
salt, cinnamon, and nutmeg. In a separate large bowl, beat apple
sauce, eggs, avocado, and vanilla. Add to flour mixture. Stir in grated
zucchini and carrot. Spoon mixture into 18 greased muffins tins.
Bake at 350° for 25 minutes.
