Chicken Jardinière
olive oil
4 chicken breasts, quartered lengthwise
2 cups water
1 ½ tsp tarragon
1 pkg. onion soup mix
2 cups thinly sliced carrots, broccoli and quartered mushrooms
1 tbsp fresh ginger, chopped
3 cloves garlic, chopped
¾ cup sour cream
2 tbsp cornstarch
Heat oil in large skillet. Cook chicken with ginger and garlic. Add water
and tarragon. Stir in soup mix. Cover and simmer for 25 minutes. Add
vegetables; return to a boil. Cover and simmer for 5 minutes. Remove
chicken from skillet. Mix sour cream and cornstarch; stir into mixture.
Bring to boil; cook 1 minute, stirring constantly. Spoon sauce and
vegetables over chicken.
Serve with rice or noodles.
