Chicken Quesadillas
4 or 5 chicken breasts
1 pkg. fajita seasoning
freshly ground pepper
1 tbsp oil
1 each red pepper, green pepper and onion
2 cloves garlic, finely chopped
2 green onions, chopped
2 tomatoes, chopped
1 (8 oz) pkg. each marble, Monterey Jack and Gouda cheese, grated
10 (10 inch) tortillas
Cut chicken into very small cubes. Heat oil in wok or skillet. Cook chicken
with fajita seasonings, garlic and freshly ground pepper. Add peppers,
onion and tomato. Stir-fry for 10 minutes. Layer ½ of each tortilla with
cheese; followed by chicken mixture and then more cheese. Fold tortillas.
Bake at 350° F for 10 minutes. Serve with sour cream and salsa.
