Cakes, Cupcakes and Muffins
Chocolate Avocado Cake

3 cups unbleached flour
6 tbsp cocoa powder
2 tsp each, baking powder and baking soda
½ tsp salt
¼ cup sunflower oil
1 ripe avocado, mashed
2 cups water
2 tbsp white vinegar
2 tsp vanilla
2 cups organic sugar

2 ripe avocados
2 cups icing sugar
4 tbsp cocoa powder

Grease and flour tube pan. In a large bowl, mix flour, cocoa, baking powder,
​baking soda, and salt. In a separate bowl, whisk together oil, avocado, sugar,
​and vanilla. Add to dry ingredients. Whisk until smooth. Pour into prepared
​pan and bake at 350° for 50 minutes. Let cool for an hour.

Icing: Process icing ingredients in food processor. Frost after cake has cooled.
