Chocolate Zucchini Loaf






​​​3 eggs
2 cups sugar
1 cup sunflower oil
2 oz. unsweetened chocolate, melted
1 tsp vanilla
2 cups zucchini, grated, not peeled
3 cups unbleached flour
1 tsp salt
1 tsp cinnamon
1 ½ tsp baking powder
1 tsp baking soda

In medium sized bowl, beat eggs. Beat in sugar and oil. Stir in melted
​chocolate. Add vanilla and grated zucchini.
In a large bowl, mix flour, salt, cinnamon, baking powder and soda.
​ Stir in chocolate mixture.
Pour into 2 (9-5-3 inch) loaf pans. Bake at 350° F for 60 minutes. Cool
​in pans for 15 minutes. Turn out onto rack to cool.
