Greek Lemon Chicken Soup
4 chicken breasts cut into small pieces
2 cloves garlic, chopped
8-10 cups chicken broth
1 cup each chopped carrots and celery
2 green onion, chopped
1 ½ cups rice, precooked
1 tsp. each dill, parsley, white pepper, and minced ginger
4 eggs
¼ cup lemon juice
Cook chicken and garlic in skillet. In small bowl, whisk eggs and lemon
juice together, set aside. Bring chicken broth to a boil in large saucepan.
Reduce heat to Minimum-medium. Add chicken, carrots, celery, green
onion rice, dill, parsley, ginger and white pepper. Slowly spoon some of
the soup into egg mixture and stir. Slowly add egg and soup mixture into
saucepan and stir slowly. Cover and cook for about an hour.
