Gum Drop Cake
1 ½ cups butter
1 cup organic sugar
2 tsp vanilla
1 tsp lemon zest
3 cups unbleached flour
1 ½ tsp baking powder
¾ cup evaporated milk
2 ½ cups baking gums with an additional ¼ cup unbleached flour
Cream butter and sugar. Add egg 1 at a time, beating after each. Beat in vanilla
and lemon zest. Combine flour and baking powder. Mix in butter and sugar
mixture and milk. Add baking gums mixed with ¼ cup flour, then add to batter.
Line 10-inch spring-form pan with parchment paper, then spray with Pam.
Pour batter into pan and bake at 300° for 1 to 1 hour and 45 minutes.
