Hash Brown Casserole
¼ cup butter, melted
1 can cream of mushroom soup
1 cup sour cream
1 onion, chopped
½ brick marble cheese, grated
4 potatoes, cooked and diced
½ cup Parmesan cheese, grated
Peel 4 potatoes and boil, whole, until fork just easily pierces through.
Place potatoes in container and refrigerate overnight. In medium
casserole dish, combine butter, soup, sour cream, onion and 1 cup marble
cheese. Dice potatoes and mix in, gently. Top with remaining marble cheese.
Sprinkle with Parmesan cheese. Bake at 350° F for 1 hour.
