Jewel Bean Salad
Dressing:
½ cup each rice wine vinegar and olive oil
1/3 cup white sugar
1 tsp garlic powder
Bring to a boil and allow to cool before pouring over beans
2 cans each of pinto beans, black beans and corn
1 can green chilies
1 jalapeno pepper, finely chopped
1 red pepper, finely chopped
1 green pepper, finely chopped
bunch of cilantro, chopped
Mix all together and toss with cooled dressing. Refrigerate for at least
an hour before serving.
