Norwegian Meatballs


2 eggs
½ cup milk
1 cup oatmeal
½ onion, minced
2 tsp salt
2 tsp sugar
½ tsp each, ground ginger, nutmeg, allspice and pepper
2 pounds lean ground beef
1 pound ground pork
3 tbsp butter
2 tbsp mince onion
5 tbsp flour
4 cups beef broth
½ cup whipping cream
dash of Cayenne pepper and white pepper

In large bowl, combine eggs, milk, oatmeal, ½ of an onion, salt,
​sugar, ginger, nutmeg, allspice and pepper. Add meat and mix
​well. Shape into 1 inch meatballs. Place in baking pans. Bake a
​t 375° F for 30 minutes. Set aside.
Melt butter in large skillet. Saute 2 tbsp minced onion until tender.
​Stir in flour and brown lightly. Add broth and stir until thickened.
​Blend in whipping cream, Cayenne and white pepper. Gently stir
​in meatballs. Cover and simmer for an hour.
