Cakes, Cupcakes and Muffins
Oatmeal Spice Muffins
2 cups rolled oats
2 cups rice milk
1 ¾ cups unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1 cup organic sugar
1 cup sunflower oil
1 teaspoon pure vanilla extract
¼ cup each, ground flax seed, Chia seeds and hemp hearts
In a large bowl, stir together oats, Chia seeds and rice milk; let sit
for 30 minutes. In a medium bowl, add flour, baking powder, baking
soda, salt, cinnamon, and nutmeg; set aside. After oats and Chia seeds
have finished soaking, add sugar and eggs into the rice milk mixture.
Mix in oil and vanilla, then mix in flour mixture. Scoop into 24 greased
muffin tins. At 400° bake 20 to 25 minutes.
