Peanut Butter Banana Bread
1 ½ cups whole wheat flour
¼ cup ground flax seed
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp each nutmeg and cinnamon
1/3 cup shortening
¾ cup peanut butter
½ cup organic sugar
½ cup apple sauce
2 eggs
1 ¼ cups mashed bananas
In a medium bowl, combine flour, baking powder, baking soda, salt,
nutmeg and cinnamon. In a large bowl, cream shortening, peanut
butter, sugar and apple sauce with beater, on medium speed. Add
eggs and beat well. Stir in dry ingredients alternately with mashed
bananas. Pour batter into 2 greased loaf pans and bake at 350° F
for 30 to 40 minutes.
