4 cups unbleached flour
1 tsp salt
1 cup milk
1 egg, beaten
Mix flour and salt. Add milk and egg. Knead on a floured surface until
dough feels elastic. Divide dough into 6 balls. Roll each into thin layer.
Use round, biscuit cutter or glass to cut out perogies.
½ onion, finely chopped
Spoon 1 tsp of filling on to each perogy. Fold in half and pinch ends of
perogies to seal edges. May freeze, by sprinkling some flour on pans and
placing perogies on pans and freezing them that way for an hour before
placing in freezer bags.
