Perogies

​4 cups unbleached flour
1 tsp salt
1 cup milk
1 egg, beaten

Mix flour and salt. Add milk and egg. Knead on a floured surface until
​dough feels elastic. Divide dough into 6 balls. Roll each into thin layer.
​Use round, biscuit cutter or glass to cut out perogies.

Filling:
Mashed potatoes
½ onion, finely chopped

Spoon 1 tsp of filling on to each perogy. Fold in half and pinch ends of
​perogies to seal edges. May freeze, by sprinkling some flour on pans and
​placing perogies on pans and freezing them that way for an hour before
​placing in freezer bags.
