Cakes, Cupcakes and Muffins
Pineapple Zucchini Muffins

3 eggs
½ cup olive oil
1 cup organic sugar
½ cup apple sauce
​1 tsp vanilla
2 cups grated zucchini
1 can crushed pineapple, drained
2¾ cup whole wheat flour
¼ cup ground Flax seed
1 tsp each, baking soda, baking powder and sea salt

​Grease 3 muffin tin pans or 3 mini loaf pans. In a large bowl,
​combine eggs, oil, sugar, apple sauce and vanilla. Beat until
​thick and foamy. Stir in pineapple and zucchini. In a medium
​bowl, combine flour, Flax seed, baking powder, baking soda
​and salt. Stir in zucchini and pineapple mixture. Spoon mixture
​into prepared pans and bake at 350° F for 30 minutes.

Makes 36 muffins or 24 mini loaves.
