Cakes, Cupcakes and Muffins
Poppy seed Banana Muffins
3 over ripe bananas, mashed
1 egg
½ cup organic sugar
¼ cup sunflower oil
½ cup Silk True Coconut
1 tsp poppy seeds
1 tsp dried lavender, chopped
1 ¼ cups whole wheat flour
¼ cup ground flax seed
2 tsp baking powder
¼ tsp baking soda
½ tsp sea salt
1 tsp vanilla
In large bowl, combine egg, sugar and oil. Add Silk, poppy
seeds, lavender, vanilla and mashed bananas. In another
bowl, combine flour, ground flax seed, salt, baking powder
and baking soda. Add to liquid mixture and mix well. Scoop
into 12 greased muffin tins or an 8 mini loaf pan. Bake at
400° for 20-25 minutes.
