Potato Cheese Soup
Place into food processor and puree:
5 potatoes, peeled and cut
3 carrots, peeled and cut
3 ribs of celery cut
3 tbsp butter
½ white onion
¼ cup flour
1 cup milk
4 cups chicken broth
1 tsp each, salt, pepper, thyme, garlic powder, and basil
4 slices of cooked bacon, crumbled
¾ cup desired, grated cheese
In large sauce pan, saute onion in butter. Whisk flour in milk. Add spices
and gradually add whisked milk and flour. Cook and stir over medium heat.
Add potato, carrot and celery mixture and bacon and cheese. Simmer for 30
minutes or more.
