1 each green and red pepper, chopped
3 green onions, chopped
3 Roma tomatoes, chopped
salt and freshly ground pepper
desired cheese, grated
Bake potatoes at 400 degrees for 1 hour. Mix together peppers,
green onions, tomatoes, salt and pepper. Cut potatoes in half,
length wise, and scoop out most of the potato (leave ¼ inch of
potato on the skins.) Spoon pepper, onion and tomato mixture
into potato skins, top with cheese and bake at 350 degrees for
30 minutes. Serve with salsa and sour cream.
For a quick Potato Skin fix; use salsa instead of peppers,
tomatoes and green onions.
