Chicken
2 ½ lbs chicken, cut into small pieces
1-2 tbsp each cumin seeds, cayenne pepper, turmeric, paprika, and
minced ginger (1 tbsp. for mild, 2 tbsp. for spicy.)
1 can tomato paste
3 tomatoes, diced
2 cloves garlic, chopped
1 onion, chopped
½ cup water
½ cup whipping cream
In large skillet, cook chicken with cumin, cayenne, turmeric, paprika,
and tomatoes. Add tomato paste, garlic, onion and ginger. When cooked,
add water and whipping cream. Add fresh or frozen vegetables, if desired.
Cover and simmer for about 20 minutes. Serve over rice or noodles.
