Cheese Souffle
3 tbsp flour
2 tbsp butter
1 cup milk
½ tsp salt
3 eggs, separated
7 oz. Cheddar cheese, cubed
1 oz. Grated cheddar cheese
Melt butter in small sauce pan. Whisk flour and milk together, whisk into 
​melted butter, a little at a time. Leave to cool. Stir in egg yolks, salt and
​cheese cubes. Beat egg whites until stiff and fold them carefully into cheese
​mixture. Pour mixture into greased, small casserole dish. Sprinkle grated
​cheese on ​top. Bake at 400° for about 50 minutes. Serve with bread
​or rolls and ​butter.
