2 tbsp Olive oil, divided
2 chicken breasts cut into 1-inch cubes
1 carrot, sliced diagonally
1 cup broccoli, fresh or frozen
2 cloves garlic, minced
12 ounces angel hair pasta
2 to 3 cups chicken broth
1 tsp basil
freshly ground pepper
lemon pepper
¼ cup grated desired cheese, using finer side of grater
Heat 1 tbsp. of oil in wok or skillet. Cook chicken about 5 minutes until
done, stirring often. Remove from skillet and drain on paper towel. In
same skillet, heat remaining oil. Add broccoli, carrot and garlic, cook
for 6 minutes. Meanwhile, begin heating water for pasta. Cook pasta
according to package directions. Add chicken broth, basil, and pepper
to skillet. Stir to combine. Return chicken to skillet and add cheese. Reduce
heat and simmer. Drain pasta. Add to chicken skillet and vegetable mixture.
Simmer for 30 minutes.
