Chicken and Pumpkin Chili
½ lb thin strips of chicken, finely cut up
1 white onion, diced
1 orange pepper, diced
8 ribs celery, sliced
3 cloves garlic, minced
1 can stewed tomatoes
1 can crushed tomatoes
1 can pumpkin puree
1 ½ (combined) dried chick peas, Romano beans, pinto beans, and kidney
beans (boil in water for 30 minutes, then drain, before adding to chili.)
1 tbsp brown sugar
1 ½ tbsp chili powder
1 tsp cinnamon
½ tsp sea salt
½ tsp crushed chillies
1/8 tsp ground cloves
In a large skillet or saucepan, cook chicken in 1 tbsp of olive oil. Add
remaining ingredients and simmer for 2 hours.
Variation: use turkey instead of chicken.
