Dairy-free Pancakes
¼ cup Becel Vegan margarine, melted
2 cups rice milk
2 eggs
¼ cup organic sugar
1/8 cup coconut sugar
1 ¾ cups unbleached flour
¼ cup ground flax seed
1 tsp baking soda
1 tsp baking powder (if you want fluffy pancakes)
1 tsp vanilla

Whisk ingredients together. Using an ice cream scoop or ladle, scoop
​small amounts of batter on a skillet and cook for 2 to 3 minutes, per side.
