Egg’n Muffin

1 egg
salt and freshly ground pepper
1 English muffin, halved
mayonnaise or miracle whip
2 slices of desired cheese
1 sausage round, precooked
¼ tsp. dill, optional
1 green onion, chopped, optional
1-2 tsp salsa, optional

Toast both halves of English muffin, spread both halves with mayo
​or miracle whip. Crack egg open in a small, flat, microwave safe
​container. Using a fork, puncture the yolk a few times. Or cook in
​a mini double boiler or sauce pan. Sprinkle on salt and pepper. Add
​green onions and dill, if desired. Cook in microwave for 30 seconds
​or in desired pan for 3 minutes. Add cheese and cook for another 30
​seconds. Place egg on one half of English muffin, followed by sausage
​round or salsa or both. Top with other half of English muffin and voila,
​you have an Egg'n muffin. Serve with hash browns.
