Mellow Jell-O Cookies

​3 ½ cups of unbleached flour
1 tsp baking powder
1 ½ cups butter
1 cup sugar
1 egg
1 tsp vanilla
4 (3oz) pkg. Jell-O
¼ cup water

In a large bowl, beat butter and sugar. Stir in egg, vanilla, flour, baking
​powder, and water. Beat a few minutes. Divide into four sections. Mix
​2 tbsp Jell-O powder into each section, by hand. Use four different
​Jell-O powders, if desired. Shape into 1 inch balls and roll into extra
​Jell-O powder. Place on baking sheet and flatten slightly. Bake at 350°
​for 9 minutes.
