​​​​Minty Chocolate Cheesecake




1 ¾ cups chocolate wafer crumbs
¼ cup butter, melted
3 (250 g) pkgs cream cheese, softened
¾ cup sugar
3 eggs
1/3 cup crème de menthe liqueur or ¾ tsp mint extract with 10 drops
​green food colouring
3 oz. White baking chocolate, melted
1 frosted mint chocolate bar

Combine first two ingredients. Press into bottom and 2 inches up the
​sides of a 9 inch spring form pan. Beat cream cheese and sugar until
​very smooth. Beat in eggs, one at a time, just until blended. Beat in
​liqueur and melted white chocolate. Pour over prepared crust and
​bake at 325° F for 50 minutes. Run knife around sides of pan to loosen.
​ Cool at room temperature. Chill overnight. Garnish with curls of mint
​chocolate bar. A vegetable peeler will work well to make curls.
