Pumpkin Muffins
4  ½ cups whole wheat flour
¼  ground Flax seed
¼  cup organic sugar
1 ½ tsp each baking powder, baking soda, salt, 
   nutmeg, cinnamon and ground cloves
3 eggs
1 cup sunflower oil
1 (29 oz.) can pumpkin
1 cup unsweetened applesauce
½ chopped nuts, optional
Oil 2 or 3 dozen muffin tins or line with paper baking cups.  Mini-loaf pans 
work well too.  In a very large bowl, combine dry ingredients.  In a separate 
bowl, mix eggs, pumpkin, oil, applesauce and desired nuts.  Add this to dry 
ingredients.  Spoon into prepared muffin tins.  Bake at 350° for 30 to 35 
minutes.
