Pancakes and Waffles
Pumpkin Waffles
¼ cup Becel Vegan Margarine
2 eggs
2 cups rice milk
1 tsp vanilla
1 cup whole wheat flour
1 cup unbleached flour
1 tsp baking soda
¼ cup brown sugar
½ tsp each, ground cinnamon, ginger, allspice, cloves,
and nutmeg
1 can (2 cups) pumpkin puree
Whisk ingredients together and stir in pumpkin puree.
Cook in waffle iron for about 2 minutes, depending
on waffle iron.
