Veggies and Fruit
Salsa






8 Roma tomatoes, chopped
½ white onion, chopped
1 red pepper, chopped
a few chopped jalapeno peppers, if desired
1 to 3 cloves garlic, peeled and minced
1 tbsp salt
1/8 cup lime-juice
1 tsp each cayenne pepper, freshly ground pepper and cumin
2 tsp cilantro
dash Tabasco sauce

Chop veggies and garlic in food processor or mini food processor
​(small amounts at a time.) Mix in bowl with salt. Leave for 15 minutes.
​Pour salsa into strainer; let rest on edges of bowl for another 15 minutes,
​stirring occasionally. Drain liquid. Add spices, lime-juice and Tabasco sauce.
​Add chilies and jalapeno peppers, if desired. Refrigerate for ½ an hour.
