Cakes, Cupcakes and Muffins
Spice Cake

¾ cup shortening
2 ¼ cups flour
1 cup sugar
1 tsp each, baking powder, salt, cinnamon and cloves
¾ tsp baking soda
¾ cup brown sugar
1 cup buttermilk
3 eggs

Stir shortening to soften. Stir in flour, sugar, baking powder, salt,
​baking powder and spices. Add brown sugar and buttermilk.Mix
​till all flour is dampened; beat vigorously 2 minutes. Add eggs;
​beat 2 minutes more. Bake in 2 wax paper
lined 9”by 1 ½ ” round
​pans at 350 degrees for 30 to 35 minutes. Frost with
​brown-sugar frosting;

2 unbeaten egg whites
1 ¼ cups brown sugar
¼ tsp cream of tartar
¼ cup water
dash of salt
1 tsp vanilla

Combine all ingredients except vanilla in top of double boiler.
​ Beat 1 minute to blend. Place over boiling water and cook,
​stirring constantly about 7 minutes (do not overcook.) Remove
​from boiling water and pour into mixing bowl. Add vanilla, beat
​until spreading consistency, about 2 minutes. Frost top and sides
​of first spice cake, place second on top of the other and frost sides
​and top of it as well.
