Spicy Chicken Stir-fry

1 tbsp Olive oil
3 cloves of garlic, peeled and chopped
1 onion, sliced
1 tbsp whole ginger, chopped
chicken, about 5 or 6 breasts, thin slices
1 can whole baby corn
pea pods
1 can sliced water chestnuts
2 tbsp cornstarch
¼ cup cold water
½ tsp chicken Oxo
½ cup boiling water
splash of red wine vinegar
few squirts of Worcestershire sauce
1/8 cup soy sauce
1 tsp coriander, cayenne pepper, lemon pepper, cumin, freshly ground
​pepper, thyme, and paprika

In medium sized bowl, whisk cornstarch and cold water. In measuring
​jug mix chicken Oxo and boiling water. Pour it into cornstarch mixture
​bowl. Mix in last remaining ingredients. In wok or large skillet, heat oil.
​Cook garlic, onion, and ginger for a few minutes. Add chicken. Add
​vegetables once chicken is white. Continue cooking for about 3 minutes.
​Pour cornstarch mixture into wok/skillet, reduce heat, and simmer for
​about ½ an hour. Serve over rice or noodles.
