Strawberry Bread
2 ¼ cups fresh strawberries, sliced
3 cups unbleached flour
¼ cup ground Flax seed
½ cup + 1 tbsp organic sugar
½ cup apple sauce
1 tbsp cinnamon
1 tsp each, baking soda, baking powder and salt
1 cup sunflower oil
4 eggs, beaten
Butter and flour 2 loaf pans. Place sliced
strawberries in medium sized bowl. Sprinkle
lightly with 1 tbsp sugar. In large bowl, combine
lour, sugar, cinnamon, salt, baking soda and
baking powder. Blend oil, apple sauce and eggs
in with strawberries. Add to flour mixture. Bake
for 45 minutes at 350°.
