Cakes, Cupcakes and Muffins
Sweet Potato Banana Muffins


​​​​2 medium sweet potatoes, grated
2 ripe bananas
1 cup brown sugar
½ cup sunflower oil
2 eggs
1 ¾ cups whole wheat flour
2 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
1/8 tsp ground cloves
1 tsp vanilla

In a large bowl, mash the bananas. Mix in sweet potato,
​brown sugar, oil, eggs, and vanilla. In a medium bowl, mix
​flour, baking soda, baking powder, salt, and spices. Pour
​flour mixture into banana and sweet potato mixture. Mix well.
​Pour into greased 12 to 18 muffin tins. Bake at 350° for 25 minutes.
