Cakes, Cupcakes and Muffins
Sweet Potato Banana Muffins
2 medium sweet potatoes, grated
2 ripe bananas
1 cup brown sugar
½ cup sunflower oil
2 eggs
1 ¾ cups whole wheat flour
2 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
1/8 tsp ground cloves
1 tsp vanilla
In a large bowl, mash the bananas. Mix in sweet potato,
brown sugar, oil, eggs, and vanilla. In a medium bowl, mix
flour, baking soda, baking powder, salt, and spices. Pour
flour mixture into banana and sweet potato mixture. Mix well.
Pour into greased 12 to 18 muffin tins. Bake at 350° for 25 minutes.
