Tourtiere


Pastry:
3 cups flour
1 tsp salt
250 g shortening
ice water
1 egg, beaten

Combine flour and salt. Blend in shortening. Gradually blend in enough
​water to allow flour and shortening to just hold together. Turn dough onto
​a floured surface, form into a ball, and divide into two. Roll out one
​bottom shell and place into pie pan.
Roll out second layer of pastry and set aside.

Filling:
1 lb. ground pork
1 onion, chopped
1 clove garlic, minced
½ tsp each, salt, sage and celery salt
¼ tsp ground cloves
½ cup water
½ cup fine breadcrumbs

Place all ingredients, except for breadcrumbs, into large saucepan. Bring to
​a boil. Reduce to medium and cook 20 minutes. Remove from heat and add
​breadcrumbs. Let stand for 10 minutes. Cool and place mixture on top of
​pastry shell. Place second layer of pastry on top and bake at 400° F for
​30 minutes, or until crust is golden brown.



Traditionally, Tourtiere is served with green tomato relish after Christmas Mass.
