½ lb turkey strips, sliced
1 red onion, diced
2 cloves garlic, minced
8 cups chicken broth
1 tomato, diced
1 red pepper, diced
3 carrots, chopped
3 ribs celery, chopped
½ cup wild rice
1 tsp each, paprika, lemon pepper, cayenne pepper, cilantro, parsley,
sea salt and pepper
1 tbsp chives
2 cups, combined, dried pinto, kidney, garbanzo, Lima, Romano and navy
beans, plus dried green peas, split peas and red lentils (boil separately in
water for 30 minutes, then drain.)
In a large saucepan cook turkey, onion and garlic in a bit of olive oil. Add
remaining ingredients. Bring to a boil then simmer for 2 hours.
