Ukrainian Meatballs


1 tbsp butter
½ onion, chopped
1 cup oatmeal
1/3 cup milk
½ lb lean, ground beef
2 eggs
2 tsp salt
1 tsp freshly ground pepper
¼ tsp thyme
½ cup flour
1 cup beef broth
½ cup sour cream

Melt butter in skillet. Sauté onions for 5 minutes. In large bowl,
​mix oatmeal, beef, eggs, salt, pepper, thyme and sautéed onions.
​Shape into 1 inch meatballs and roll in the flour. Brown meatballs,
​on all sides, in skillet. Mix in the broth, milk and sour cream. Cover
​and simmer for an hour. Serve with perogies.
