Meatballs
Ukrainian Meatballs
1 tbsp butter
½ onion, chopped
1 cup oatmeal
1/3 cup milk
½ lb lean, ground beef
2 eggs
2 tsp salt
1 tsp freshly ground pepper
¼ tsp thyme
½ cup flour
1 cup beef broth
½ cup sour cream
Melt butter in skillet. Sauté onions for 5 minutes. In large bowl,
mix oatmeal, beef, eggs, salt, pepper, thyme and sautéed onions.
Shape into 1 inch meatballs and roll in the flour. Brown meatballs,
on all sides, in skillet. Mix in the broth, milk and sour cream. Cover
and simmer for an hour. Serve with perogies.
