Yellow Mustard Potato Salad
3 potatoes, peeled and cubed
2 ribs of celery, finely chopped
½ of yellow onion, finely chopped
3 tbsp sweet pickle relish
1/3 cup mayo
1/3 cup yellow mustard
salt and pepper
2 tbsp parsley
Boil potatoes in salted water for 10 to 12 minutes or until tender. Drain
potatoes and mash in medium sized bowl. Add remaining ingredients.
Refrigerate until ready to serve.
