Zucchini Banana Loaf
1 zucchini, grated
1 over-ripe banana, mashed
1½ cups unbleached flour
½ cup sunflower oil
¾ cup organic sugar
½ tsp salt
1 tsp. vanilla
1 egg, beaten
1 tsp cinnamon
1 tsp baking soda
½ tsp baking powder
In a large bowl, mix banana, oil,egg, and vanilla. Add sugar, baking
powder, baking soda, salt, and cinnamon. Add flour then stir in zucchini.
Pour into greased and floured loaf pan. Bake at 350 degrees for 1 hour.
